Refreshing Lemon and Mint Water Kefir

This is a real thirst quencher – it’s very bubbly too. Kefir is full of healthy probiotics, that heal the gut, clear the skin and energise the whole body.

Probiotics can help restore balance in the gut, thereby improving digestion. As kefir is rich in probiotic bacteria, it is highly nutritious because beneficial microorganisms that are involved in the fermentation process add live enzymes and B vitamins to the drink. Improved digestion brings many other benefits, such as digestive comfort, regular bowel movement, better sleeping, increased energy levels just to name a few….. Keep those healthy bacteria happy!!

Ingredients

4 tablespoons water kefir grains

90g raw cane sugar or other sweetener

1 litre/ 4 cups water

2 lemons, peeled

handful of fresh mint leaves

1.5 litre preserving jar with tight fitting lid

strainer

 

 

Method

Put the water kefir grains in the jar, add the sweetener and water and stir well. cut each lemon into small wedges and add to the jar together with the mint leaves. Seal with the jar lid. Keep the jar away from direct sunlight and leave to ferment for 2 days, stirring a couple of times in those 48 hours. Be careful when opening the jar because a considerable amount of carbon dioxide is produced in the fermentation.

Strain the liquid into a clean bottle or jar, squeeze out all the juice from the lemon wedges and add it, then discard the used lemon and mint leaves. Rince the kefir grains and re-use. If you’re not going to drink this soda right away, refrigerate for up to a week. Enjoy!
