Warming Spiced Apple Crumble

1 cup of ground almonds

1 1/2 cup oats

2 tbsp crushed walnuts

3 tbsp coconut oil

2 tsp cinnamon

1/2 teaspoon ground cardamon

1 tbspĀ grated ginger

8 small apples (or 6 large apples)

Ā½ cup maple syrup


Peel the apples and remove the core, cutting them into bite-sized pieces. Put the apples into a saucepan with 2 tablespoons of water. Cook gently on a medium heat for about 8-10 minutes until soft but still retaining colour and bite. Transfer it to a baking dish

Use the saucepan to melt the coconut oil, add the maple syrup, cinnamon, cardamom and ginger. pour this over the oaty almond mixture and stir well until all the dry ingredients are coated with the coconut oil mix. Distribute the topping mixture over the apples

Sprinkle the walnuts evenly on top of the crumble and bake until golden (20-30 minutes).
