Green Pea and Mint Hummus

There is a good reason why parents encourage kids to eat more green peas. They have many essential vitamins and minerals that the body requires. Green peas are not high in calories, but they have protein, compared to some other vegetables. In addition, peas are a good source of dietary fibre, Vitamin A, iron, folate, thiamin, Vitamin C and manganese. They also have a high level of Vitamin K.

Ingredients

2 cups fresh green peas, cooked and cooled

3 tablespoons fresh lemon juice

1/4 cup extra virgin olive oil

1 tablespoon tahini

1 garlic clove, peeled and chopped

2 tablespoon chopped fresh mint

sea salt and freshly ground black pepper

 

Method

combine all the hummus ingredients in a high-speed blender and blend until smooth. Adjust the seasonings to taste.
